Apple tree prunning and ice damage

I have aquired 80 acres of scrub bush, an old apple orchard and overgrown farmland.
I would like to start prunning the apple trees so that the yield is increased for the deer on the property and also I would like to repair some of the ice storm damage.
The apple trees have not been prunned in 25+ years.
Any advice?
